Here is a simple but delicious Chinese fried rice recipe to make now and again. Making this Chinese vegetable fried rice is really easy if you are familiar with cooking.

Chinese people do not always cook rice just enough for one meal, and there is always leftover. If there is any leftover remained, simply store it in a covered container in the refrigerator and re heat it for the next meal.
2 cups short grain rice
2 1/2 cups water
2 leaks
12 dried Chinese mushrooms
3 tablespoons peanut oil
1 tablespoon sesame oil
1 cup coarsely grated carrot
4 stalks celery
1 tablespoon finely grated ginger
2 cloves garlic, finely grated
1 cop chopped spring onions
2 tablespoons light soy sauce
1/2 cup mushroom liquid
8 oz (250 g) green bean
4 oz (125 g) bean sprouts (optional)
1 cup sliced bamboo shoot, (optional)
Pinch grounded black pepper to taste (optional)
Salt to taste
Instructions
Cook the rice in water the day before it is required or cook it a few hours a head, and allow it to cool down. (separate the grains and spread out the rice so grains dry, then refrigerate.
Soak mushrooms for 30 minutes then squeeze them, and keep the liquid.
With a sharp knife cut off and discard stems, and cut mushrooms caps into thin slices.
Wash leaks well in cold water and make sure grit is clean, then cut into thin slices. Use the white portion only (2-3 inches) of the green part.
String celery and green beans and cut in diagonal slices.
wash and drain bean sprouts and pick off any brown tails.
Heat the peanut oil and sesame oil in a large frying pan, and then add ginger, garlic and fry for 3 minutes.
Add mushrooms, leaks, celery, beans, and carrots and stir fry over high heat for 4 minutes.
Then add the bean sprouts, bamboo shoots and fry 2 more minutes.
Add rice toss and fry over high heat until heated through.
Add spring onion, and mix reserved mushrooms liquid with soy sauce together and sprinkle evenly over the rice.
Add seasoning salt to taste and continue to stir and mix all the ingredients well.
Cover the saucepan lid with a kitchen towel and cook for 5 more minutes on low heat
