Chinese Chicken Fried Rice (1 serving)

  • Chicken 1/2 kg (cooked cubes)
  • Eggs 2
  • Oil 1/2 tbsp
  • Soy sauce 6 tbsp
  • Onion 1 (chopped)
  • Fresh pea 3/4 cup
  • Carrot 2 (large, diced)
  • Coriander leaves 1/2 cup (chopped)
  • Red bell pepper 1 (large, diced)
  • White rice 3 Cup (boiled)
  • Green bell pepper 1/2 (large, diced)
  • In a pan heat oil. Add onion and saute until soft.
  • Then add chicken and 2 tbsp soy sauce and stir fry for 5 to 6 minutes.
  • Stir in carrots, coriander leaves, red bell pepper, peas and green bell pepper and stir fry another 5 minutes.
  • Then add rice and stir thoroughly.
  • Finally, stir in scrambled eggs and leftover soy sauce, heat through and serve hot.
