Ingredients:

1 tablespoon butter

1 small onion, diced

2 cloves garlic, minced

4 cups chicken or vegetable broth

1 pound frozen hash browns

1 cup milk

1 cup shredded cheddar cheese

1/2 cup sour cream

Salt and pepper, to taste

Optional toppings: chopped green onions, crispy bacon, additional shredded cheese

Instructions:

In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent and the garlic is fragrant.

Pour in the chicken or vegetable broth and bring it to a boil. Once boiling, add the frozen hash browns to the pot. Reduce the heat to medium-low, cover the pot, and simmer for about 15-20 minutes, or until the hash browns are cooked through and tender.

Using a potato masher or the back of a spoon, partially mash the hash browns to break them up and thicken the soup. You can leave some chunks for texture.

Stir in the milk and shredded cheddar cheese. Continue cooking over medium-low heat until the cheese is melted and the soup is heated through, about 5 minutes.

Remove the pot from the heat and stir in the sour cream until well combined. Season with salt and pepper to taste. Adjust the seasoning as needed.

Ladle the potato soup into bowls and garnish with your desired toppings, such as chopped green onions, crispy bacon, or additional shredded cheese.

Serve the soup hot and enjoy its creamy and comforting flavors.
