Massaman or Moslem Style Curry
Ingredients
1 tablespoon prepared Masaman Curry Paste
1 can @ 14 ounces coconut milk
1 pound cubed stewing beef, or other meat
1 pound cubed sweet potato
1 medium red onion, large, diced
3 tablespoons fish sauce
2 tablespoons sugar
2 to 5 sliced chilies/Thai chili powder
As needed to thin water, stock or brown stock
Directions:
Lightly sauté curry paste till fluid, add all the remaining
ingredients, and simmer 1 hour or until tender. Served with basil, mint
and peanuts
